The voltage would be good, but that 200lb NiMH pack would slow it down and probably be difficult to mount. Plus the water cooling...
30 of the Lithium packs would be 330V for about $240 and only 5.6 kG (12 lb). Only 732 W-Hr but good for 20C means it could give you 15kW or 20HP for a quick sprint. And for about $1000 you'd have 2.8 kW-Hr and 80 HP peak!
With 250-350V you can use a three phase induction motor. They have smart motor control modules good for 5 HP and cost about $50 (but you have to add the microcontroller and interface):
