I suggest the motor from a production EV - Leaf, Tesla whatever
As far as two motors is concerned don't overthink it - a standard open diff as used by 99.9% of cars on the road simply uses the road to equalise the loads - two motors run separately would be BETTER than that - and that is before you get into torque vectoring and such
If I was doing your car I would be sticking a Tesla or Leaf transaxle where your diff is
A BIGGER problem is where to put the batteries!
