How to mount and wire two (2) PB-6 (5k ohm pots) together to run a curtis 1238?

Not sure how, but the bigger question is, why are you wanting to do this?

there's one throttle input for the controller and one brake input.

Trying to comply with some rules for the competition:

"All acceleration control signals (between the accelerator pedal and the motor controller) must
have error checking.
For analog acceleration control signals, this error checking must detect open circuit, short to
ground and short to sensor power
For digital acceleration control signals, this error checking must detect a loss of
communication."

I'm curious too: which sanctioning body? I've never heard of this type of rule and I'm not sure how using two pb-6's would satisfy it.

What do other competitors do?

Formula SAE.

What you should be using is a dual channel hall effect sensor, not a shitty Potbox.

You're students, right? I'd say do a tad more searching and see what you come up with. If you can't find anything in a day, let me know.

hint: Look up "throttle position sensor" and "dual channel" on google and see what pops up.
