you need a switch on the either the positive or negative wire to the contactor or else it will be powered on at all times. a key switch or even a toggle switch rated at least 10 amps should work. SPST

So do I turn the switch on then once contactor has clicked turn it off again

No when you get into gokart you "start the gokart" turn on the switch the switch is on after that till you turn it off. The controller should have throttle connection s marked grd, 5+, hall/speed

or it has a matching conector to this style of connector

. or it may be more complex I haven't a clue to more complex throttles. ignore the brake switch just speed ground, speed and +5v are needed once you have it working then if your throttle has a brake switch you can worry about it.

My 2 cents. You need to make sure the three throttle wires are correct or nothing will happen or the motor will just run at a fixed speed.
