I'd head to elmoto.net first, lots of us over there have converted and it's a good place to start.
Fab is going to be the key here, because of tight packaging on a motorcycle.
130kmh is doable, but you might suffer a little on the low end unless you have a lot of power capacity in the motor/controller and batteries.
Range might be hard, but its doable. You have to get some dense batteries. I wouldn't go lifepo4, but something LiIon (NMC or other). Avoid lipo. You need something dense and easy to package.
Voltage is up to you. Size of pack depends on a lot of things like how many Wh/mile you'd use. The faster you go and the more you "gun it", is going to take a higher wh/mi. I'd estimate that you'd need 125wh/mi average for highway/city. So if you want 75miles , that'd take about 9.4kWh. That's going to be a little hard on a smaller bike.
5-7k for that range and speed is going to be hard, esp with a doner and fabrication.
