What type plugs are people using for interconnecting wiring on your EV project cars.

I generally see amp seal type plugs used.

Anderson power-pole are okey-ish for prototyping. In the real electric cars (not DIY) they are no wire-to-wire connectors. All connectors are wire-to-box. HV wires mostly terminated with lugs and attached to the buses with torqued bolts. Molex HV connectors are good though, like:
