Can someone help me wire up my mean well DC/DC converter?

I am confused, see the HEP-600c-12 operated with an input of either AC of DC, but on the input side of the inverter it has 3 wire connection points, labeled "ground, L, and N", I just have no idea where to connect my HV+ and HV-

Use L (Line) and N (Neutral) for DC + & -. Polarity doesn't matter. Ground not needed.

It looks like an AC/DC converter, not DC/DC that's why there is no mention on polarity

Yup, its an AC/DC with the ability to work with a DC input:

page 2, Voltage range: 90 ~ 305VAC and 127 ~ 431VDC

Polarity on the input should not matter, as it's rectified before it gets to the switching supply.

you might as well use hv- on N, just in case they did something stupid with ground.
